Short answer

Generating a new image using an existing one as the starting point.

In img2img you start from an existing image rather than pure noise. A denoising strength setting determines how closely the result resembles the original.

At low strength the image stays almost the same and only the style changes. At high strength only the rough composition survives.

Its most common use is turning a rough sketch into a finished image: a simple hand drawing becomes a professional illustration while keeping its composition.
